Super Seaweed Seedy Crackers

These crackers are full of delicious umami flavor thanks to nori—dried edible seaweed that tastes like the sea!

Combine seaweed with pumpkin seeds, sunflower seeds, sesame seeds, and flax seeds, and you’ll have a powerhouse snack that can support heart health, boost immunity, improve digestion, and promote overall well-being.

When shopping, be sure to look for responsibly farmed or harvested seaweed—there are wonderful farms throughout the United States that you can support, especially on the East Coast!


Prep Time: 10 minutes

Cook Time: 40 minutes

Serves: 4-6

Ingredients:

  • ¼  cup nori, scrunched up and broken into tiny pieces (1 sheet)

  • ¼  cup  pumpkin seeds

  • ¼  cup raw sunflower seeds

  • ¼  cup sesame seeds

  • ¼  cup flax seeds

  • ½ cup arrowroot flour (or arrowroot cornstarch)

  • Sea salt and freshly ground black pepper

  • 2 tablespoons olive oil

  • ⅓ cup hot water

 
 

Method:

  1. Preheat oven to 325 degrees F.

  2. In a large bowl, combine seeds and arrowroot. Mix in olive oil followed by a big pinch of salt and a few grinds of pepper. Add hot water, mix thoroughly, and let rest for 5 minutes. 

  3. After the mixture has rested, place it onto the center of a parchment sheet. Cover with the second sheet of parchment. Gently roll the mixture so that it covers the surface in a thin, even layer. Gently slide the parchment onto the sheet pan. Remove the top layer of parchment.

  4. Bake for 35-40 minutes until the crackers are lightly brown and crispy (overbaked crackers will taste bitter)

  5. When the crackers have cooled, break into pieces and enjoy! Store in an airtight container up to 1 week.
